Earl Grey Chocolate Truffles

These Earl Grey Chocolate Truffles are easy to make and are perfect 

as a party treat or a portioned dessert. The prominent but gentle taste 

of Sri Gardens Earl Grey Tea adds a refreshing twist to this popular 

dessert.


Ingredients:

  • 1 1/4 cups heavy cream
  • 3 teabags of Sri Gardens Earl Grey Tea
  • 1 tbsp unsalted butter
  • 12 ounces semisweet chocolate (coarsely chopped)
  • 1 tsp pure vanilla extract
  • 1 to 2 cups cocoa powder

Instructions:

  1. Add the cream, tea bags, butter, and a pinch of salt to a small saucepan and bring to a simmer over medium heat. Simmer for 5 minutes, then remove the tea bags. 
  2. Put the chocolate in a medium heatproof bowl, pour the hot cream mixture over it and let it sit until the chocolate is almost completely melted for about 10 minutes. 
  3. Stir the chocolate-cream mixture with a whisk or rubber spatula until it becomes smooth. Stir in the vanilla, then whisk until the ganache is smooth and shiny. 
  4. Transfer to a shallow container, cover, and refrigerate for at least 3 hours or up to overnight. 
  5. When completely cooled, line a baking sheet with parchment. Put the cocoa powder in another shallow dish. Scoop tablespoons of the firm ganache, roll into balls, and then coat each in the cocoa powder. 
  6. Transfer the truffles to the prepared baking sheet, cover with plastic wrap, and refrigerate until firm. Serve with a cup of Sri Gardens Earl Grey Tea.

Makes: 30 balls
