Soft and aromatic Indian Paratha with Saville Mixed Pickles will be a filling and flavourful addittion to your savoury meals! Saville Mixed Pickles provide a gentle sour crunch to these parathas, offering a refreshing twist to a traditional recipe. Enjoy them with thick sour cream, soups, or meat dishes.
Ingredients:
- 1 Cup Wheat Flour
- 1/4 Cup Saville Tomato Paste
- Salt (as per taste)
- Water (as required)
- 1 Tsp Vegetable Oil
For the Filling:
- 1 small Onion
- 1 Potato (boiled, peeled, and chopped)
- 1 Cup Saville Mixed Pickles
- 3 Tsp Peas shelled
- 3 Tsp Paneer crumbled
- 1/4 Tsp Red Chilli Powder
- 1/4 Tsp Turmeric Powder
- 1/4 Tsp Coriander Powder
- 1/4 Tsp Garam Masala Powder
- Coriander Leaves (handful)
For Tempering:
- 1/2 Tbsp Vegetable Oil
- 1/4 Tsp Cumin Seeds
Instructions:
- In a bowl, combine wheat flour, tomato paste, salt, water, and oil. Knead into a soft dough and allow to rest for 15-30 minutes.
- Heat oil in a pan on medium heat and fry cumin seeds for 10 seconds.
- Sauté onions for 45 seconds then cook for 5 minutes with the mixed pickles, paneer, turmeric, red chili, and coriander leaves.
- When the vegetables are done, add the potatoes and season with salt, garam masala, and cilantro. Cook for a couple minutes while stirring.
- After a few minutes of cooking, let it cool. Then gently fold in some of the veggie mix and form a medium paratha.
- Preheat tawa on medium heat. Cook both sides of the paratha adding oil around the edges.
- When golden brown, serve with a side dish of choice and enjoy!
