Mixed Vegetable Paratha

Soft and aromatic Indian Paratha with Saville Mixed Pickles will be a filling and flavourful addittion to your savoury meals! Saville Mixed Pickles provide a gentle sour crunch to these parathas, offering a refreshing twist to a traditional recipe. Enjoy them with thick sour cream, soups, or meat dishes.

 

Ingredients:

  • 1 Cup Wheat Flour
  • 1/4 Cup Saville Tomato Paste
  • Salt (as per taste)
  • Water (as required)
  • 1 Tsp Vegetable Oil

For the Filling:

  • 1 small Onion
  • 1 Potato (boiled, peeled, and chopped)
  • 1 Cup Saville Mixed Pickles
  • 3 Tsp Peas shelled
  • 3 Tsp Paneer crumbled
  • 1/4 Tsp Red Chilli Powder
  • 1/4 Tsp Turmeric Powder
  • 1/4 Tsp Coriander Powder
  • 1/4 Tsp Garam Masala Powder
  • Coriander Leaves (handful)

For Tempering:

  • 1/2 Tbsp Vegetable Oil
  • 1/4 Tsp Cumin Seeds

Instructions:

  1. In a bowl, combine wheat flour, tomato paste, salt, water, and oil. Knead into a soft dough and allow to rest for 15-30 minutes. 
  2. Heat oil in a pan on medium heat and fry cumin seeds for 10 seconds. 
  3. Sauté onions for 45 seconds then cook for 5 minutes with the mixed pickles, paneer, turmeric, red chili, and coriander leaves. 
  4. When the vegetables are done, add the potatoes and season with salt, garam masala, and cilantro. Cook for a couple minutes while stirring. 
  5. After a few minutes of cooking, let it cool. Then gently fold in some of the veggie mix and form a medium paratha. 
  6. Preheat tawa on medium heat. Cook both sides of the paratha adding oil around the edges.
  7. When golden brown, serve with a side dish of choice and enjoy!
